Good olive oil deserves good storage. Light, heat, oxygen, and time can accelerate oxidation and gradually flatten the aromas and flavors that make extra virgin olive oil distinctive.
The basic rule is simple: keep the bottle dark, cool, clean, and tightly closed.
Keep It Away From Light
The International Olive Council identifies light as the main threat to olive-oil quality. Store the bottle inside a cabinet or another dark place rather than in a sunny window or under bright display lighting.
Dark glass helps reduce light exposure, but the bottle still benefits from a dark storage location.
Keep It Away From Heat
Do not store olive oil beside a burner, oven vent, radiator, or hot window. The International Olive Council recommends a storage range of approximately 13–25°C, or 55–77°F.
A normal cabinet away from the stove is usually a more convenient location than the countertop beside it.
Close the Bottle After Every Use
Contact with oxygen accelerates oxidation. Pour what you need, wipe the opening when necessary, and close the cap again rather than leaving an open spout exposed for long periods.
Keep the bottle away from detergents, paint, smoke, and strong odors as well.
Choose a Size You Will Actually Use
The International Olive Council recommends buying containers that match roughly one to three months of consumption after opening. Choose a bottle size that fits how often you cook so the oil is not left open longer than necessary.
What If Olive Oil Turns Cloudy in the Refrigerator?
At low temperatures, some fats and suspended particles can solidify and make olive oil look cloudy or crystallized. The International Olive Council describes this as reversible and not, by itself, a quality defect.
For convenient everyday use, store the bottle in the recommended cool, dark range and away from temperature swings.
