A homemade vinaigrette can turn a simple bowl of greens, roasted vegetables, beans, or grains into a complete side dish. This lemon version uses a short ingredient list and comes together in about five minutes.

Makes: about 1/2 cup
Ingredients
- 1/3 cup extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- Freshly ground black pepper
- 1/2 teaspoon dried oregano, optional
- 1/2 teaspoon honey, optional
Method
- Add the lemon juice, Dijon mustard, salt, black pepper, oregano, and honey to a small bowl or jar.
- Whisk or shake until combined.
- Add the olive oil gradually while whisking, or seal the jar and shake again.
- Taste and adjust with a little more lemon, olive oil, salt, or pepper.
Where to Use It
Toss the vinaigrette with salad greens, spoon it over roasted vegetables, fold it into beans or grains, or serve a small amount with bread.
Make Only What You Need
The dressing may separate as it stands; whisk or shake it again before serving. If you save any, cover it and refrigerate it promptly.
