WHAT MAKES ITALOIL SPECIAL

My Name is Paolo Savescu.

ITALOIL is the continuation of my family’s story.

I was born in Capodimonte, a small village on the shores of Lake Bolsena in central Italy. Life there follows the seasons, and olive trees have stood for generations.

As a child, I spent my days beside my father and siblings in the groves. We harvested olives by hand, pressed them in the evening, and made wine for our home. Today, our family cares for nearly 2,000 olive trees rooted in the volcanic hills around the lake.

Food became another expression of that connection. I trained at a pizza school in Rome and a baking school in Parma. Today I am the chef at SERA, where ITALOIL is also used in the kitchen. For me, good food begins with ingredients chosen for their flavor, origin, and care.

I still feel most connected to nature during the olive harvest—the silence, the scent of leaves warming in the sun, and the honest work. ITALOIL is my way of sharing that passion with friends and with people who truly appreciate exceptional extra virgin olive oil.

MY JOURNEY BEGINS

From Italy to Chicago

In 2021, I left Capodimonte and moved to Chicago. I arrived with some cash, a 50‑liter can of our family’s olive oil, and a dream I was ready to pursue. What I missed most was my family, and the land that raised me.

And very quickly, I realized something important: the olive oil I grew up with, fresh and alive, was almost impossible to find here. The oils I tasted lacked the flavor, the brightness, the soul that comes from true connection to the land.

Here comes the exciting part

The Beginning of ITALOIL

In 2022, I founded ITALOIL to share my family’s extra virgin olive oil from Lake Bolsena with people in the United States. We bring it over in small batches and stay close to every step—from the groves and harvest to the customers who take a bottle home.

What began with one can of oil has grown one customer at a time. Farmers markets became our home in Chicagoland: a place to meet people, share the story, and let them taste the character of our October–November 2025 harvest for themselves.

ITALOIL is built from passion before profit. It is for friends, home cooks, chefs, and anyone who cares about where their food comes from and how it is made.

ITALOIL has grown one customer at a time through family, friends, returning shoppers, and the people Paolo meets at Chicagoland farmers markets. We remain a small family business focused on sharing our olive-oil story and helping customers choose a bottle that fits their kitchen, table, or gift.
