WHAT MAKES ITALOIL SPECIAL
My Name is Paolo Savescu.
ITALOIL is the continuation of my family’s story.
I was born in Capodimonte, a small village resting on the shores of Lake Bolsena in the heart of central Italy. It is a place where life follows the rhythm of the seasons, where the mornings smell of earth and wild herbs, and where olive trees have stood for generations.
As a child, I spent my days beside my father and my siblings in the groves. We harvested olives by hand, pressed them in the evening, and made wine for our home. What began as simple family tradition slowly grew into something larger. My father devoted himself entirely to olive oil, expanding our groves across the volcanic hills that surround the lake. Today, our family cares for nearly 2,000 olive trees rooted in this ancient, mineral‑rich soil.
From the very beginning, I felt a deep bond with those groves. The silence, the scent of the leaves warming in the sun, the honest work. It wasn’t just a job. It was the place where I learned who I was.
MY JOURNEY BEGINS
From Italy to Chicago
In 2021, I left Capodimonte and moved to Chicago. I arrived with some cash, a 50‑liter can of our family’s olive oil, and a dream I was ready to pursue. What I missed most was my family, and the land that raised me.
And very quickly, I realized something important: the olive oil I grew up with, fresh and alive, was almost impossible to find here. The oils I tasted lacked the flavor, the brightness, the soul that comes from true connection to the land.
Here comes the exciting part
The Beginning of ITALOIL
So in 2022, I founded ITALOIL. My idea was simple and honest. I wanted to bring my family’s olive oil from Lake Bolsena directly to the Windy City, except with purest, freshest, and truest tasting olive oil this city has ever known. What began with one can of oil has grown into a small but passionate local business, built one customer at a time. Farmers markets became our home here, a place where I could meet people, share our story, and let them taste the difference for themselves.
Since then, ITALOIL has grown year after year thanks to the people who believed in us.
Family, friends, new acquaintances, my customers, and the many people I meet along the way have made this leap of faith worth it. They are the reason this dream continues to grow. Customers who returned, who shared our oil with their families, who made it part of their kitchens and their daily life.We remain a small family business, and we intend to stay that way. ITALOIL is focused on quality, transparency, and a direct line between the land where the oil is born and the tables where it is enjoyed.
